The General Manager is part of the Campus Dining team within the division of Administration at Vanderbilt University and is responsible for the for the leadership and oversight of a large scale dining hall. This leader will create and influence an operation built on integrity, respect, and excellence while leading all aspects of a quality dining program. Responsibilities include; supervision of managers and employees in operation, ensuring all payroll and HR processes are followed, execution of the Fusion menu management processes and procedures, and adherence to labor schedules and goals. The General Manager position reports to the Assistant Director and has interactions with staff, students, faculty, and external entities on a regular basis.

Our Dining program is highly decorated, the winner of many prestigious awards in the food service industry, including Best On-Site Food Service Operation in the Nation, Best Food Service Operator, the prestigious Ivy Award, and many more. We have main dining centers, restaurants and cafes, convenience stores, and we employ over 300 employees.
Duties and Responsibilities
Promote and maintain a positive and collaborative working environment that encourages open communication, consistency, fairness and opportunities for continuous learning while achieving the vision and mission of Campus Dining
Utilize Feed Forward process to create goals and action items managers in operation and that honest and timely feedback to managers around goals and performance
Work with central HR for all progressive discipline before administered
Serve as link between managers and upper management to communicate concerns and ideas
Support location managers in the successful onboarding for all new team members and that managers review handbook guidelines with all new hires
Encourage two-way communication by ensuring that managers are holding line ups twice a day
Ensure that managers are providing open honest feedback to team members and are completing performance evaluations for team members
Oversee compliance and execution of the Operational Effectiveness systems, processes, and procedures
Coach and support managers to provide guidance, direction, and management of Fusion recipes and production sheets with team members
Ensure that Chef and Managers are providing feedback to Executive Chef and Operational Excellence group about accuracy of recipes and forecasts
Support the Fusion menu management process by supporting the collection of accurate results on production sheets at assigned station(s)
Perform food and labor audits in operation on a consistent basis, create action plans, and coordinate with Operational Effectiveness to ensure location is continuing to improve efficiencies
Analyze food and labor data, and associated performance metrics, to identify opportunities for efficiency and cost reductions
Support waste management processes and procedures by analyzing Lean Path reports and providing feedback to managers and ensure that waste is disposed through compost waste stream
Work with Operational Effectiveness team and Leadership to develop and implement continuous improvement trainings
Ensure safe working environment is maintained at all times by providing support to management so University standards are followed through regular inspections
Maintain a safe work environment by enforcing all safety standards and performing safety audits
Ensure food is properly dated and labeled in coolers and storage areas
Administrative & Financial Management:
Work closely with operational excellence team to create labor schedules to ensure best labor management practices are implemented
Oversee the Oracle time management system in the operation, ensures leave management requests like PTO are entered and approved on a weekly basis
Work with Operational Effectiveness and Executive Chef to review pre and post cost results to identify opportunities for menu management
Cash Management: Possesses sufficient fundamental proficiency to successfully demonstrate cash drawer management in practical applications of moderate difficulty
Reconcile cash sales and perform safe audits
Monitor all financial transactions and complete Daily Deposit Work Sheets (DDWS)
Point of Sale (POS): Possesses sufficient fundamental proficiency to successfully demonstrate Point Of Sale operations in practical applications of moderate difficulty
Run transaction detail reports to optimize demand driven scheduling
Constantly review menu boards, signage and website postings to ensure accuracy of published menus to menu served
This position has management responsibility over managers in location; this position reports administratively and functionally to the Assistant Director (or other position, depending on location)
High school diploma is necessary.
Bachelor's degree from an accredited institution is preferred
At least 5 years of management experience in food service management is necessary.
Proficiency in (Word, Outlook, Excel, PowerPoint and POS System is necessary.
Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse population is necessary.
Strong time management, organizational and multi-tasking skills and an eye for detail is necessary.
Demonstrated ability to deliver exceptional customer service is necessary.
Ability to manage people and have accountability for Vanderbilt assets is necessary.
